Carnival fritters recipe
Chiacchiere are the most popular fried or baked sweets during the Carnival season in Italy. They are like crispy fritters and their name means ‘chatter’ or ‘gossip’ but every italian region seems to claim them as their own: cenci, lattughe, bugie ect, in Sicily they are called chiacchiere and they are made with Marsala wine.


  • 300g flour 00
  • 50g sugar
  • 2 eggs
  • 30g melted unsalted butter
  • 1 pinch of baking powder
  • 1 pinch of vanilla powder
  • 2 TB Marsala wine
  • powdered sugar for topping as needed
  • frying oil, as needed


Pour out the flour onto a flat work surface. Make a hole in the center and add the other ingredients in the center: sugar, eggs, melted butter, vanillina powder, baking powder. Knead all ingredients with hands until the dough is smooth and make a ball. Then cover in plastic wrap and let rest in the fridge for 20 minutes.
Then, divide the dough into pieces and roll out the dough until 2-3 inch using a rolling pin. Use a knife or pasta cutter to cut out rectangles or whatever shape you prefer.
Fry the dough in boiling oil. The dough should be completely submerged in the oil for about 1 minute. Once golden, remove the chiacchiere using a slotted spoon and place them on parchment paper. Then sprinkle some powdered sugar all over the top.
Our Carnival’s chiacchiere are ready to be served immediately.

* For a light version, you can bake the chiacchiere into preheat oven to 180° for 8-10 minutes or when they are gold.
