Caserecce pasta with pistachio pesto sauce and dry tomatoes

The intense flavor of the Pistachios and the tomato's sweetness make this dish very tasty and scented, all Mediterranean's flavors in one recipe.

Ingredients for 4 persons:

400g Caserecce Pasta

150g Pistachio pesto sauce

8 Dry tomatoes

Extra virgin olive oil

Garlic

Salt

Mint

Parmesan

Preparation:

Put a pot of water on the fire and bring it to the boil, adding a little salt. In the meantime, fry a clove of garlic with olive oil in a pan, when the garlic starts to turn golden brown, add dry tomatoes (cut in small pieces) and some spoons of water, to avoid the tomatoes from burning, cook for a few minutes.
When the water comes to the boil, add the pasta and cook it for a couple of minutes less than the time written on the label.
Drain the pasta and put it in the pan with the dry tomatoes. Mix them with the Pistachio pesto sauce and a small cup of cooking water.
Serve pasta with some mint and grated parmesan cheese (if you like it!).
