Panelle are a popular street food in Palermo and are often eaten between slices of bread or on a roll, like a sandwich. They are crispy, savoryand easy to prepare.
In a big saucepan, mix the chickpea flour in the water. Place over a medium heat, stirring constantly with a wooden spoon for 15 minutes. Stir faster and faster until the mixture is completely firm. The mixture is done when it begins to break off the saucepan. Add chopped parsley and, a moment before it begins to simmer, remove from heat.
Quickly pour the mixture onto a marble slab or a cutting board spread using a wooden spoon to form a thickness of approximately 6-7mm. Allow to cool. Using a sharp knife cut into squares and fry the fritters in hot sunflower oil until they become golden brown.
Remove from the oil, drain thoroughly and place on paper towel. Add salt and pepper if you wish.
